Tofu is a traditional component of many East Asian and Southeast Asian cuisines; in modern Western cooking, it is commonly used as a meat substitute. Nutritionally, tofu is low in calories, while providing a rich source of protein. Cultivation of soybeans has one of the lowest needs for land use (1.3 m2/ 1000 kcal) and emits some of the lowest amounts of greenhouse gas emissions per gram of edible protein of any food (1.6 kg CO2/ 100 g protein).

==== Anonymous burial ==== Another sort of unmarked grave is a burial site with an anonymous marker, such as a simple cross; boots, rifle and helmet; a sword and shield; a cairn of stones; or even a monument. This may occur when identification of the deceased is impossible. Although many unidentified deceased are buried in potter's fields, some are memorialized, especially in smaller communities or in the case of deaths publicized by local media. Anonymous burials also happen in poorer or disadvantaged populations' communities in countries such as South Africa, where in the past the non-white population was simply too poor to afford headstones. At the cemetery in the small rural town of Harding, KwaZulu-Natal, many grave sites have no identification and just have a border of stones which mark out the dimensions of the grave site itself. Many countries have buried an unidentified soldier (or other member of the military) in a prominent location as a form of respect for all unidentified war dead. The UK memorializes 'the Unknown Warrior' in Westminster Abbey; France's is buried underneath the Arc de Triomphe; Italy's is buried within the Monumento al Milite Ignoto in Rome; Canada's is buried at the National War Memorial in Ottawa; Australia's is located at the Australian War Memorial in Canberra; New Zealand's is located in Wellington; Russia's memorial is in Alexander Garden in Moscow, and the U.S.'s is located at Arlington National Cemetery. == Epidemiology and prevention == Selenium deficiency is uncommon, but regions in China, Europe, Russia, and New Zealand have low selenium levels in croplands and diet. The worldwide prevalence of selenium deficiency is however predicted to rise under climate change due to the loss of selenium from croplands. These diseases are most common in certain parts of China where the intake is low because the soil is extremely deficient in selenium. Studies in Jiangsu Province of China have indicated a reduction in the prevalence of these diseases by taking selenium supplements. In Finland, selenium salts are added to chemical fertilizers, as a way to increase selenium in soils. Dietary supplements may utilize sodium selenite, L-selenomethionine, or selenium-enriched yeast.

Biochemical and cell-based assays demonstrated that the CUT domains within CUX1 and other Cut domain proteins stimulate the enzymatic activities of some enzymes of the base excision repair pathway and accelerate the repair of oxidative DNA damage. Hence, human and primary rodent fibroblasts that are transfected with KRAS and CUX1 exhibit similar ROS levels as cells that receive only KRAS but show much reduced DNA damage. In agreement with these findings, CUX1 knockdown is synthetic lethal in all cancer cells exhibiting high levels of ROS as a consequence of activating mutations in either KRAS, HRAS, BRAF or EGFR.

=== Use in structural biology === The transpeptidase activity of sortase is taken advantage of by structural biologists to produce fusion proteins in vitro. The recognition motif (LPXTG) is added to the C-terminus of a protein of interest while an oligo-glycine motif is added to the N-terminus of the second protein to be ligated. Upon addition of sortase to the protein mixture, the two peptides are covalently linked through a native peptide bond. This reaction is employed by NMR spectroscopists to produce NMR invisible solubility tags and by X-ray crystallographers to promote complex formation.
=== Electron shells === The Danish physicist Niels Bohr applied Max Planck's idea of quantization to the atom. He concluded that the energy levels of electrons were quantised: only a discrete set of stable energy states were allowed. Bohr then attempted to understand periodicity through electron configurations, surmising in 1913 that the outer electrons should be responsible for the chemical properties of the element. In 1913, he produced the first electronic periodic table based on a quantum atom. Bohr called his electron shells "rings" in 1913: atomic orbitals within shells did not exist at the time of his planetary model. Bohr explains in Part 3 of his famous 1913 paper that the maximum electrons in a shell is eight, writing, "We see, further, that a ring of n electrons cannot rotate in a single ring round a nucleus of charge ne unless n < 8." For smaller atoms, the electron shells would be filled as follows: "rings of electrons will only join if they contain equal numbers of electrons; and that accordingly the numbers of electrons on inner rings will only be 2, 4, 8." However, in larger atoms the innermost shell would contain eight electrons: "on the other hand, the periodic system of the elements strongly suggests that already in neon N = 10 an inner ring of eight electrons will occur." His proposed electron configurations for the atoms (shown to the right) mostly do not accord with those now known. They were improved further after the work of Arnold Sommerfeld and Edmund Stoner discovered more quantum numbers.
=== South America === The South American continent contains some of the oldest mummies in the world, both deliberate and accidental. The bodies were preserved by the best agent for mummification: the environment. The Pacific coastal desert in Peru and Chile is one of the driest areas in the world and the dryness facilitated mummification. Rather than developing elaborate processes such as later-dynasty ancient Egyptians, the early South Americans often left their dead in naturally dry or frozen areas, though some did perform surgical preparation when mummification was intentional. Some of the reasons for intentional mummification in South America include memorialization, immortalization, and religious offerings. A large number of mummified bodies have been found in pre-Columbian cemeteries scattered around Peru. The bodies had often been wrapped for burial in finely-woven textiles.
